So this Mother's Day will be the last time that I will be living in-state to celebrate with the family. I want to make it special so I'm going to go all out. I asked her tonight what she wanted and she said, "Oh, you know.. Steak would be just fine for me. And some veggies." She grew up pretty poor and is a very frugal shopper. She's never really had "good steak" before. So, I'm going to buy some Wagyu beef (Wagyu beef is what is mistakenly called Kobe beef here in the States -foodsnob). BUT - I'm stuck on what I should cook for the sides and veggie dish. There's always scalloped potatoes or baked potatoes. Maybe asparagus with grilled peppers. I'm really trying to find something different that maybe she's never had before but nothing too over the top that she won't enjoy. My dad and brother aren't very adventurous eaters at all but it's Mother's Day so screw em'! My mom used to eat pigs feet, spam and collared greens a ton back in her day so she is open to different flavors. I may just have to go to Whole Foods or the Farmer's Market tomorrow and improvise. Anyone have any idea's? She's trying to eat healthy these days as she's working through the P90x program right now. So, nothing crazy high in sodium.
Try quinoa instead of potatoes. Something like this: http://www.whatwereeating.com/recipes/new-york-strip-and-a-tangy-quinoa-salad/ Otherwise a red wine risotto is super delicious, although not particularly healthy. http://www.foodnetwork.com/recipes/giada-de-laurentiis/red-wine-risotto-with-peas-recipe/index.html I feel like this would be good too: http://www.lifesambrosia.com/2010/08/heirloom-tomato-and-mozzarella-bruschetta-recipe.html but it might work better with a chicken or pasta dish.
I like your thinking but Wagyu beef is expensive enough as it is. Digging the quinoa idea. I'll definitely look into that.
Quinoa is good but if she's not adventurous it might be a stretch. I'd go with asparagus and a good risotto personally.
I'm sure that your mom is going to love whatever you do. Moms are like that, the effort is what they'll always remember and brag about to their friends.
